Beef and Eggplant Casserole
Ingredients:
1 1/2 lb. ground beef
3 Tbs. chopped onion
2 cloves garlic, minced
1 egg, beaten
1/2 cup bread crumbs
Salt and pepper to taste
2 cans tomato sauce (8 oz. each)
1 small egg plant, sliced thin
1/2 c. sour cream
1/2 c. shredded cheddar cheese
1 1/2 lb. ground beef

Salt and pepper to taste
2 cans tomato sauce (8 oz. each)
1 small egg plant, sliced thin
1/2 c. sour cream
1/2 c. shredded cheddar cheese
Directions:
Cook beef slightly and pour off grease. Combine with onion garlic egg and crumbs,seasonings and one can tomato sauce. Place half this mixture in greased casserole. Place eggplant over the above. Combine sour cream and cheese and spread over eggplant. Cover with with remaining meat mixture. Bake at 350 for 30 minutes. Top with second can of tomato sauce and return to oven for 30 minutes.
