Beef and Potato Loaf
Ingredients:
1 lb. lean ground beef
3/4 c. evaporated milk
1/2 c. cracker crumbs
1/4 c. ketchup
5 Tbs. onion, chopped
2 tsp. salt
1/4 tsp. pepper
4 c. raw potatoes, thinly sliced
1-3 tsp. parsley flakes

1-3 tsp. parsley flakes
Directions:
Combine beef, milk, crumbs, ketchup, 4 Tbs. onion, 1 tsp.salt and 1/8 tsp. pepper; mix thoroughly. Arrange potatoes and 1 Tbs. onion in a greased 2 qt. casserole. Sprinkle with remaining salt, pepper and parsley flakes. Spread meat mixture over potatoes. Decorate the top with more ketchup if desired. Bake at 350 for 1 hour, until potatoes are tender.
Makes 4 Servings
