Coconut Chocolate Chip Cookies
Ingredients:
1/2 c. butter, softened
3/4 c. sugar
1 egg
1/2 tsp. coconut extract
1 c. plus 2 Tbs. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. semisweet chocolate chips
1/2 c. flaked coconut

Directions:
In a mixing bowl, cream butter and sugar. Beat in egg and coconut extract; mix well. Combine the flour, baking soda and salt; add to the creamed mixture. Stir in chocolate chips and coconut.Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets. Bake at 375 for 11-13 minutes or until golden brown. remove to wire rack to cool. Makes about 1 1/4 dozen cookies.
