Crab and Cheese Delight
Ingredients:
10 oz. canned crabmeat, crumbled
1/4 c. mayonnaise
1 small onion, finely chopped
Salt and pepper to taste
1/4 tsp. lemon juice
4 French baguette rounds
1/2 c. Mozzarella cheese, grated
10 oz. canned crabmeat, crumbled

Directions:
In a bowl, mix first 5 ingredients. Refrigerate 2-3 hours. Preheat oven to 400 degrees. Spread baguette rounds with chilled seafood mixture. Sprinkle with cheese. Transfer to a non-stick baking sheet. Cook in oven 7 minutes or so. Increase oven temperature to broil. Continue cooking 2 minutes or until brown. Serve.
