Crockpot Pot Roast
Ingredients:
2-3 lb. eye round roast
4 Tbs. oil
5 potatoes, cut in half
5 carrots, cut in chunks
5 medium oinios
2 cans beef broth
4 Tbs. butter
4 Tbs. flour
Salt to taste
Sm. can tomato paste

Directions:
Put oil in saucepan.
Brown roast on all sides.Place roast in crockpot with the beef broth.
Put some water in sauce pan and stir to remove essence.
Put this iiquid in crockpot and cook on high until tender. Take out roast and slice with electric knife.
Add tomato paste.
Make a paste with the butter and flour and add to broth. Stir.
Replace beef. Add vegetables and continue to cook on high until vegetables are soft.
You should start the roast early in the day. The vegetables should be cooking 3-4 hours.
Makes 4-5 Servings
