Key Lime Muffins
Ingredients:
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 stick butter
2 eggs
1/4 c. lime juice
2 Tbs. lime zest
1 c. sugar
1 c. plain yogurt

Directions:
Sift together the flour, baking powder, soda and salt, and set aside. Cream the butter with the sugar until blended. Add the eggs, one at a time, and beat until light. Add lime juice, zest and yogurt. Stir until well blended. Add the butter and egg mixture to the flour mixture and stir until blended. Do not overbeat. Put into greased muffin tins and bake for about 20 minutes at 375 degrees. Makes 12.
