Lemon Bars
Ingredients:
CRUST
2 c. flour
1/2 c. powdered sugar
1 c. butter, softened
FILLING
4 eggs, slightly beaten
2 c. sugar
1/4 c. flour
1 tsp. baking powder
1/4 c. lemon juice
FROSTING
1 c. powdered sugar
2 to 3 Tbs. lemon juice

2 c. sugar
1/4 c. flour
1 tsp. baking powder
1/4 c. lemon juice
FROSTING
1 c. powdered sugar
2 to 3 Tbs. lemon juice
Directions:
In large bowl, combine all crust ingredients at low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9" pan. Bake at 350 for 20 to 30 minutes or until light golden brown.
Meanwhile, in large bowl combine all filling ingredients except lemon juice; blend well. Stir in 1/4 c. lemon juice. Pour mixture over warm crust.
Return to oven and bake an additional 25 to 30 minutes or until top is light golden brown. Cool completely.
In small bowl, combine 1 c. powdered sugar and enough lemon juice for desired spreading consistency; Blend until smooth. Spread over cooled mixture. Cut into bars or squares.
