Lemon Cheesecake Squares
Ingredients:
1 pkg. lemon-flavor cake mix (not the pudding type)
1/2 c. butter
3 eggs
2 pkg. (8 oz.each) cream cheese, cut in chunks, at room temp.
1/2 c. sugar
1/2 tsp. vanilla
2 tsp. lemon juice
10x sugar (optional)

2 pkg. (8 oz.each) cream cheese, cut in chunks, at room temp.

Directions:
Heat oven to 350. Grease and flour a 13x9" baking pan. Mix cake mix, butter and 1 egg in large bowl until crumbly.Press into bottom of prepared pan. Bake 8 minutes. In a medium bowl beat cream cheese until fluffy. Mix in the remaining 2 eggs, sugar, vanilla and lemon juice until blended and smooth. Pour onto hot crust. Bake 25 minutes longer until top edges are golden brown. Dust with 10x sugar. Cool completely in pan. Cut into squares. Store in refrigerator. Makes 48.
