Lemon Squares
Ingredients:
1 c. flour
1/2 c. butter, softened
1/4 c. powdered sugar
2 eggs
1 c. sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. grated lemon peel (opt.)
2 Tbs. lemon juice

Directions:
Heat oven to 350. Mix flour, butter, and powdered sugar. Press in ungreased square pan, 8x8x2", building up 1/2" edges. Bake 20 minutes. Beat remaining ingredients until light and fluffy, about 3 minutes. Pour over hot crust. Bake until no indentation remains when touched lightly in the center, about 25 minutes. Cool; cut into about 1 1/2" squares. 25 cookies.
