Old-Fashioned Peanut Brittle
Ingredients:
2 c. sugar
3 c. white corn syrup
Pinch of salt
3 c. raw peanuts
1 tsp. baking soda
2 c. sugar

Directions:
Use a 10" iron skillet to make the brittle. Make a circle of sugar in the skillet and put the syrup and salt in the center. Starting with the skillet on a burner, turn the heat to medium high, add the peanuts, and cook for 8 minutes. reduce heat to medium-low and cook for 16 minutes, stirring continually. Remove from heat and stir in the baking soda.
Grease a 14x17" cookie sheet or a marble slab with butter. Pour on the brittle and leave set. When set, score into 2" squares. Break when cool. Cover tightly with plastic wrap and store in an airtight container.
