Rhubarb Brown Betty
Ingredients:
3 c. soft bread crumbs
1/2 c. melted butter
1/4 c. sugar
1/4 c. brown sugar
Grated rind of 1 lemon
1/2 tsp. nutmeg
2 c. diced rhubarb
1/2 c. sugar
2 Tbs. butter

1/4 c. sugar
1/4 c. brown sugar

1/2 tsp. nutmeg
2 c. diced rhubarb
1/2 c. sugar
2 Tbs. butter
Directions:
Combine bread crumbs with melted butter. Combine 1/4 c. granulated sugar and 1/4 c. brown sugar, rind and spices; set aside. Mix rhubarb with 1/2 c. sugar and 2 Tbs. butter. Layer bread crumbs, rhubarb mixture and spice mixture in casserole ending with bread crumbs. Dot with butter. Bake, covered, 15 minutes at 350. Remove cover and bake 20 to 30 minutes longer.
