Sand Tarts


2 1/2 c. sugar
2 c. butter
2 eggs, well beaten
4 c. flour
Small pecan nut meats
White of 1 egg


Cream butter and sugar. Slowly add the flour, working it in well. Add the well beaten eggs and mix thoroughly.Chill overnight or at least several hours. Roll out thin on floured board.Cut with simple design cutters or use a simple donut cutter. Place on cookie sheet. Brush with slightly beaten egg white and then sprinkle with a sugar cinnamon mixture.Press 1/2 pecan into center of each. Bake at 350 for 10 minutes.
