Sauerkraut and Sausage Bake
Ingredients:
1 1/2 lbs. bulk pork sausage
1 (27 oz.) can sauerkraut, rinsed, drained and snipped
1 Tbs. sliced green onion with tops
Packaged instant mashed potatoes (enough for 4 servings)
4 Tbs. grated Parmesan cheese

4 Tbs. grated Parmesan cheese
Directions:
In skillet brown sausage; drain off fat. Stir together sauerkraut and green onion, turn into a 1 1/2 qt. casserole. Spoon sausage over sauerkraut. Prepare mashed potatoes according to pkg. directions. Stir 2 Tbs. of the cheese into the mashed potatoes. Spread potatoes over sausage; sprinkle with remaining cheese. Bake, uncovered, at 400 till heated through, 35 to 40 minutes.
