Shrimp and Chicken Salad
Ingredients:
1 1/2 c. elbow macaroni
3 c. diced cooked chicken
1 c. cleaned, peeled, cooked shrimp
1 (8 3/4 oz.) can peach slices
1 (8 1/4 oz.) can pineapple chunks, drained
1 c. chopped celery
1/4 c.sliced green onion
2/3 c. sweetened condensed milk
1/2 c. lemon juice
2 Tbs. salad oil
2 Tbs. prepared mustard
1/4 tsp. salt
Lettuce cups
1 1/2 c. elbow macaroni
3 c. diced cooked chicken
1 c. cleaned, peeled, cooked shrimp
1 (8 3/4 oz.) can peach slices
1 (8 1/4 oz.) can pineapple chunks, drained
1 c. chopped celery
1/4 c.sliced green onion
2/3 c. sweetened condensed milk
1/2 c. lemon juice
2 Tbs. salad oil
2 Tbs. prepared mustard
1/4 tsp. salt
Lettuce cups
Directions:
In a sauce pan cook macaroni in boiling salted water according to package directions. Drain. In a large bowl combine drained macaroni, diced chicken, shrimp, drained peaches, pineapple, celery and sliced green onion. In a bowl stir together sweetened milk, lemon juice, salad oil, prepared mustard and salt. Blend into macaroni-chicken mixture. Cover asnd chill several hours or overnight. To serve, spoon salad into lettuce cups.
