Sour-Cream Baked Fish
Ingredients:
1 Tbs. oil
1 c. sour cream
1/2 c. dry bread crumbs
1/4 c. milk
1 Tbs. chopped parsley
1 Tbs. thinly sliced scallion
1 tsp. lemon juice
1/8 tsp. pepper
2 lb. cod fillets, fresh or frozen and thawed
1/3 tsp. grated Parmesan cheese
1/2 tsp. paprika
1 Tbs. oil
1 c. sour cream
1/2 c. dry bread crumbs
1/4 c. milk
1 Tbs. chopped parsley
1 Tbs. thinly sliced scallion
1 tsp. lemon juice
1/8 tsp. pepper
2 lb. cod fillets, fresh or frozen and thawed
1/3 tsp. grated Parmesan cheese
1/2 tsp. paprika
Directions:
Preheat oven to 400 degrees. Pour oil into 3 qt. oblong baking dish; heat in oven 5 minutes. Meanwhile, in medium bowl, combine sour cream, bread crumbs, milk, parsley, scallion, lemon juice, salt and pepper. Pat fish dry with paper towels; arrange in single layer in pan (fish will sizzle). Spread sour cream mixture evenly over fish; sprinkle with cheese and paprika. Bake 15 minutes or until brown.
Makes 8 Servings
