Zucchini Pancakes
Ingredients:
1/2 cup flour
2 cups shredded zucchini
2 eggs (separated)
3/4 tsp.salt
1/8 tsp pepper
oil

Directions:
In a medium bowl, mix flour, squash,salt, pepper, and egg yolks. In a small bowl beat egg whites until stiff but not dry. Fold in squash mixture. Drop by heaping tablespoonfuls into about 1/4 inch hot oil in skillet and brown on both sides.
