Apricot Chip Cookies
Ingredients:
1/2 c. sugar
1/2 c. brown sugar
1/2 c. butter, softened
1 egg
1 tsp. vanilla
1 1/4 c. flour
1 c. old fashioned rolled oats
1/2 c. flaked coconut
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. white chocolate chips
1/2 c. chopped dried apricots
1/2 c. chopped macadamia nuts
1/2 c. sugar
1/2 c. brown sugar
1/2 c. butter, softened
1 egg
1 tsp. vanilla
1 1/4 c. flour
1 c. old fashioned rolled oats
1/2 c. flaked coconut
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. white chocolate chips
1/2 c. chopped dried apricots
1/2 c. chopped macadamia nuts
Directions:
Heat oven to 375 degrees. In large bowl, combine sugars, butter, egg and vanilla. Beat until light and fluffy. Add flour, oats, coconut, baking soda and salt. Beat at low speed until soft dough forms. Stir in chips, apricots and nuts.
Drop by heaping teaspoonfuls 2" apart onto ungreased cookie sheets. Bake 7-10 minutes, or until edges are light golden brown. Let cool 1 minute before removing from cookie sheets.
Makes about 3 dozen cookies.
