Black Walnut Cookies
Ingredients:
1 c. butter (no substitutes), softened
2 c. brown sugar
2 eggs
1 tsp. vanilla extract
3 1/2 c. flour
1 tsp. baking soda
1/4 tsp. salt
2 c. black walnuts, divided

Directions:
In a mixing bowl, cream the butter and brown sugar. Beat in the eggs and vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Stir in 1 1/4 c. of the walnuts. Finely chop the remaining nuts. Shape into two 15" logs. Roll in chopped nuts, pressing gently. Wrap each in plastic wrap. Refrigerate for 2 hours or until firm. Unwrap and cut into 1/4" slices. Place 2" apart on greased cookie sheets. Bake at 300 for 12 minutes. Cool on wire racks. Makes 10 dozen.
