Bran Muffins
Ingredients:
1 1/2 c. whole bran cereal
1 c. buttermilk
1 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/3 c. brown sugar
1 beaten egg
1/4 c. cooking oil
3/4 c. raisins

Directions:
Combine bran and buttermilk; let stand till liquid is absorbed, about 3 minutes. In mixing bowl stir together flour, baking powder, baking soda, asnd salt; stir in brown sugar. Combine cereal-mixture, egg, and oil; add all at once to dry ingredients, stirring just till moistened. (Batter will be thick.) Fold in raisins. Fill greased muffin pans 2/3 full. Bake at 400 for 20-25 minutes. Makes 10-12 muffins.
