Candied Sweet Potato Boats
Ingredients:
4 small sweet potatoes
1/2 c. prepared mincemeat
3 Tbs. butter
1 Tbs. lemon juice
1/2 tsp. salt
1/4 c. chopped pecans

Directions:
Bake sweet potatoes at 375 for 40 to 45 minutes. Remove from oven; reduce oven temperature to 325. Cut potatoes in half lengthwise. Scoop out center of halves,leaving 1/2" shell; set shells aside. In a mixing bowl mash centers; stir in mincemeat, butter, lemon juice, and salt. Sprinkle shells lightly with additional salt, spoon mashed potato mixture into potato shells. Sprinkle pecans over potatoes. Return to oven and bake at 325 till heated through, about 15 minutes longer.
