Ingredients:
1/2 c. shortening
1 c. brown sugar
1/2 c. granulated sugar
1 tsp. vanilla
1 egg
1 c. cooked carrots, mashed and cooled
2 c. flour
1/2 tsp. baking powder
Pinch of salt
3/4 c. raisins

Directions:
Cream together the shortening and sugar. Add the vanilla, egg, carrots and the remaining ingredients in the order listed. Drop the batter by spoonfuls onto cookie sheet and bake it at 375 until done.
