Cornmeal Griddle Cakes
Ingredients:
1 1/2 c. yellow cornmeal
1/4 c. flour
1 tsp. soda
1 tsp. salt
2 c. buttermilk
2 Tbs. oil
1 slightly beaten egg yolk
1 stiffly beaten egg white

Directions:
Mix dry ungredients. Add buttermilk, oil, and egg yolk; blend well. Fold in egg white. Let stand 10 minutes. Bake on hot griddle. Makes 16 4" pancakes.
