Country Vegetable Soup
Ingredients:
3 Tbs. bacon or other cooking fat
1/2 c. diced carrot
1/2 c. diced onion
1/2 c. chopped celery
1/2 c. diced turnip
3 c. stock or water
1 c. canned tomatoes
1/2 c. diced potato
1 Tbs. chopped parsley

Directions:
Heat the fat in a large kettle and saute the carrot, onion, celery and turnip for about 5 minutes. Add the stock or water, tomatoes, potato, and a little seasoning. Cover and simmer for 35 minutes. Add parsley and adjust the seasoning before serving.
Makes 4-5 Servings
