Dark Chocolate Cake
Ingredients:
2 c. sugar
1 3/4 c. flour
3/4 c. cocoa
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 c. buttermilk
1/2 c. vegetab;e oil
2 tsp. vanilla
1 c. boiling water
2 c. sugar
1 3/4 c. flour
3/4 c. cocoa
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 c. buttermilk
1/2 c. vegetab;e oil
2 tsp. vanilla
1 c. boiling water
Directions:
Heat oven to 350 degrees. Grease and flour two 9" round baking pans or a 13x9x2" baking pan. In large mixing bowl, combine dry ingredients. Add buttermilk, eggs,oil, and vanilla; beat on medium speed for 2 minutes. Remove from mixer. Stir in boiling water. Pour into prepared pans. Bake 30 to 40 minutes or until wooden pick inserted in center comes out clean. Cool 10 to 12 minutes. Remove from pans or leave in oblong pan. Cool completely. Frost with Peanut Butter Frosting.
PEANUT BUTTER FROSTING:
4 c. powdered sugar
2/3 c. butter, room temperature
1/3 c. peanut butter
1/4 c. milk
Combine in large bowl. Mix until smooth.
Spread on cake.
When I make this for bake sales, I use two 8" square aluminum pans with lids.
Makes 8-10 Servings
