Dijon-Glazed Chicken
Ingredients:
4 chicken breast halves, skinned and boned
1/4 c. Dijon mustard
3 Tbs. brown sugar
2 tsp. minced crystallized ginger
2 Tbs. chopped fresh parsley

Directions:
Place chicken in a greased 11x7x2" baking dish. Combine mustard, brown sugar, and ginger; stir well. Brush half of glaze mixture evenly over chicken. Cover and bake at 375 for 15 to 20 minutes or until chicken is done. Uncover and baste with remaining glaze mixture. Broil chicken 4" from heat 1 to 2 minutes or just until golden. Transfer chicken to a serving platter, and sprinkle with parsley.
