Glazed Pineapple Sweet Potatoes
Ingredients:
1 can (17 1/4oz.) pineapple chunks in juice
1 1/2 lbs. sweet potatoes, peeled and cut into chunks
1/3 c. seedless raisins
1/4 c. brown sugar
3 Tbs. butter, melted
1 tsp. cinnamon

Directions:
Drain pineapple, reserving 1/4 c. juice. Combine reserved juice, sweet potatoes, raisins, sugar, butter and cinnamon in greased 9" square or 2 qt. shallow baking dish. Cover and bake at 375 for 35 minutes or until potatoes are tender. Stir in pineapple, bake, uncovered, 5 minutes.
