Lemon Bars
Ingredients:
2 1/2 c. flour, divided
1/2 c. powdered sugar
3/4 c. butter
1/2 tsp. baking powder
4 eggs, beaten
2 c. sugar
1/2 tsp. grated lemon rind
1/3 c. lemon juice

1/2 c. powdered sugar

Directions:
Combine 2 c. flour and 1/2 c. powdered sugar. Cut butter into flour mixture with a pastry blender until mixture resembles coarse meal. Spoon flour mixture into an ungresed 13x9x2" pan; press firmly and evenly into pan. Bake at 350 for 20 to 25 minutes or until crust is lightly browned. Combine remaining 1/2 c. flour and baking powder; set aside. Combine eggs, 2 c. sugar, lemon rind, and lemon juice; stir well. Stir dry ingredients into egg mixture, and pour over baked crust. Baske at 350 for 25 minutes or until lightly browned and set. Cool on wire rack. Dust lightly with powdered sugar, and cut into bars. Makes about 2 dozen.

Substitute lime juice and rind for lemon juice and rind.
