Lemon Cookies
Ingredients:
1 c. butter (room temp.) cut in pieces
3/4 c. sugar
3 egg yolks
2 1/2 c. flour
1 tsp. lemon extract
Grated peel of 1 lemon
1 c. butter (room temp.) cut in pieces

Grated peel of 1 lemon
Directions:
Combine butter and sugar in processor or med. bowl of electric mixer and blend until smooth. Add yolks 1 at a time, mixing well after each addition. Blend in remaining ingredients. Shape dough into 1 1/2" thick cylinder. Wrap in plastic and chill at least 30 minutes.
Preheat oven to 375. Cut dough into 1/4" slices and arrange on baking sheet. Bake until lightly browned, about 10 - 12 minutes. Let cool on rack.
