Lobster Newburg
Ingredients:
2 tsp. margerine
1 Tbs. flour
1/4 tsp. salt
1 1/2 c. milk
1 beaten egg
8 oz. fresh or frozen lobster, thawed
1 Tbs. dry sherry
Dash red pepper
Dash pepper
2 English muffins, split and toasted

2 English muffins, split and toasted
Directions:
In medium saucepan melt margerine. Stir in flour and salt. Add milk all at once. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Stir about 1/2 the hot mixture into beaten egg. Return all to saucepan. Cook and stir mixture till thickened, but do not boil. Stir in lobster, dry sherry and pepper. Heat through. Serve over English muffin halves.
