Mushroom Bruschetta
Ingredients:
12 slices French baguette, each 1/2" thick, or 2 individual French baguettes, cut lengthwise
3 Tbs. olive oil
2 garlic cloves, crushed
8 oz. cremini mushrooms, sliced
8 oz. mixed wild mushrooms
2 tsp. lemon juice
Salt and pepper
2 Tbs. chopped fresh parsley

8 oz. cremini mushrooms, sliced
8 oz. mixed wild mushrooms
2 tsp. lemon juice

2 Tbs. chopped fresh parsley
Directions:
Preheat the broiler to medium. Toast the bread under the hot broiler until golden on both sides. Meanwhile, heat the oil in a skillet. Add the garlic and cook gently for a few seconds, then add the cremini mushrooms. Cook stirring constantly, over high heat for 3 minutes. Add the wild mushrooms and cook for an additional 2 minutes. Stir in the lemon juice. Season to taste with salt and pepper and stir in the chopped parsley. Spoon the mushroom mixture onto the hot toast and serve.
