Pineapple-Apple Crisp
Ingredients:
1 can (20 oz.) pineapple chunks in juice, drained (reserve juice)
2 apples, peeled and cut in chunks
3 Tbs. brown sugar
1/4 tsp. cinnamon
3/4 c. plus 1 Tbs. flour, divided
1.4 c. white sugar
1/4 c. butter
1/2 c. shredded process American cheese
1 tsp. vanilla

Directions:
In medium sauce pan mix pineapple, apples, brown sugar, cinnamon and 1/2 c. pineapple juice; cook 3 minutes or until apple are tender. Meanwhile in small bowl gradually stir remaining pineapple juice into 1 Tbs. flour until smooth. Add to saucepan; mix well. Cook about 5 minutes or until thickened; remove from heat. Meanwhile in medium bowl combine remaining 3/4 c. flour and the white sugar. Cut in butter until mixture resembles fine crumbs. Stir in cheese, mixing well; set aside. Stir vanilla into saucepan mixture; pour into 8" round cake pan or baking dish. Sprinkle with crumb topping. Bake at 350 for 25 to 30 minutes or until topping is golden and filling is bubbly.
