Pork Chop Scallop
Ingredients:
6 pork chops
5 Tbs. butter
4 medium potatoes
1 small onion, chopped
2 t. flour
1 tsp. salt
1/4 tsp. pepper
2 c. milk
1 tsp. soy sauce, optional
1/2 c. sliced water chestnuts

Directions:
Cook chops in 3 Tbs. butter for 15 minutes; drain. Pare and slice potatoes; cook 5 minutes and drain. Cook onion in remaining butter until tender. Blend in flour, salt and pepper. Gradually stir in milk and soy sauce; cook until smooth and thickened, stirring constantly. Alternate layers of potatoes and water chestnuts in a buttered 2 qt. casserole. Pour white sauce over all. Place pork chops on top. Cover and bake at 350 for 25-30 minutes.
