Rhubarb Custard Pie
Ingredients:
1 1/4 c. rhubarb
3/4 c. sugar.
1 Tbs. flour
1/4 tsp. salt
2 eggs
1 c. milk
1 Tbs. butter

Directions:
Finely cut the rhubarb and put it in an unbaked pie shell. Mix together the sugar, flour, salt, beaten egg yolks, milk and melted butter. Pour this mixture over the rhubarb. Bake at 400 for 10 minutes, then at 350 for 30 minutes or longer. Cover it with a meringue made from the beaten egg whites and 1 Tbs. sugar. Brown it in the oven.
Makes 6-8 Servings
