Rhubarb Muffins
Ingredients:
1/2 c. brown sugar
1/2 c. oil
2 tsp. vanilla
1 egg
1 c. buttermilk
Combine and beat well. Add 1 1/2 c. diced rhubarb and 1/2 c. chopped nuts to the above mixture.
Combine:
2 1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
Stir into wet mixture. Spoon into muffin cups until about 2/3 full. Combine the topping ingredients and sprinkle resulting crumbs on top of each muffin before baking.

1 Tbs. melted butter
1/3 c. sugar
1 tsp. cinnamon
1/2 c. brown sugar
