Shrimp and Pasta
Ingredients:
1 1/2 qts. water
2 lbs. unpeeled medium-size fresh shrimp
1 lb. pkg. spaghetti
1 clove garlic, minced
1 tsp. grated lemon rind
3/4 c. olive oil
2 carrots, cut into julienne strips
1 zucchini, cut into julienne strips
1 red pepper, cut into julienne strips
3 Tbs. minced fresh garlic
2 Tbs minced fresh parsley
2 Tbs. lemon juice
Salt and pepper to taste
1 1/2 qts. water
2 lbs. unpeeled medium-size fresh shrimp
1 lb. pkg. spaghetti

Directions:
Bring water to a boil; add shrimp, and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and devein shrimp; set aside. Cook spaghetti according to pkg. directions; drain well. Place in a large serving bowl; set aside. Saute garlic and lemon rind in oil in a large skillet over medium hest 30 seconds. Add reserved shrimp, carrot,zucchini and red pepper; saute 6 minutes or until shrimp turn pink. Add basil, parsley,lemon juice and salt and pepper to taste, and saute 2 to 3 minutes. Add shrimp mixture to reserved spaghetti; toss. Serve immediately.
