Special Potato Pancakes
Ingredients:
2 c. grated potatoes
1/4 c. grated carrots
1 Tbs. minced onion
1/4 c. flour
1 Tbs. bacon bits
1/2 tsp. salt
Dash of pepper
2 eggs, beaten
Oil for frying

Directions:
Stir together potatoes, carrots, onion. bacon, flour, salt and pepper. Gradually add egg; mix well.
Pour enough oil in skillet to cover base thinly; heat over medium heat. When oil is heated, spoon 2 tablespoons potato mixture for each pancake. Gently flaten with spatula. Fry until golden brown on each side, about 3 minutes per side.
Drain fritters on paper towels, serve warm.
