Spinach Appetizers
Ingredients:
1 pkg. frozen chopped spinach
1/2 fine bread crumbs
1 egg, slightly beaten
1/4 c. part-skim ricotta cheese
1/4 c. freshly grated Parmesan cheese
2 green onions, chopped
1/4 tsp. cumin
2 tsp. freshly squeezed lemon juice
1 pkg. frozen chopped spinach
1/2 fine bread crumbs
1 egg, slightly beaten
1/4 c. part-skim ricotta cheese
1/4 c. freshly grated Parmesan cheese
2 green onions, chopped
1/4 tsp. cumin
2 tsp. freshly squeezed lemon juice
Directions:
Preheat oven to 400 degrees. Cook spinach according to pkg. directions or just until tender. Drain and squeeze excess water when cooled. Stir in remaining ingredients and form into 1" balls. Place on a nonstick baking sheet and bake for 12 minutes or until lightly browned. Makes 15 appetizers.
