Blueberry Coffee Cake
Ingredients:
2 c. sifted flour
2 tsp. baking powder
1/2 tsp.baking soda
2 eggs slightly beaten
1 1/2 c. fresh blueberries
1/2 c. sugar
1/2 tsp.salt
1/2 c. shortening
1/2 c. buttermilk

Directions:
Mix and sift the dry ingredients into a bowl; cut in the shortening as for biscuits. Mix the buttermilk and slightly beaten eggs; add to dry ingredients and stir to form a soft dough. Stir in blueberries. Bake in a greased 7 1/2 x 11 1/2" pan at 375 for 30 to 35 minutes.
