Buttermilk Corn Bread
Ingredients:
1 c. flour
1 c. yellow cornmeal
2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
2 beaten egg yolks
1 c. buttermilk
3 Tbs. butter, melted
2 stiffly beaten egg whites

Directions:
In a mixing bowl thoroughly stir together the flour, cornmeal, baking powder, salt, and baking soda. Combine egg yolks, buttermilk, and melted butter; add to dry ingredients, beating till blended. Fold in stiffly beaten egg whites. Turn batter into greased 8x8x2" baking pan. Bake at 350 for 25 to 30 minutes. Makes 8 servings.
