Chicken-Fried Round Steak
Ingredients:
1 1/2 lbs. beef round steak, cut 1/2" thick
1 beaten egg
1 Tbs. milk
1 c. finely crushed saltine crackers
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. cooking oil

Directions:
Pound steak to 1/4" thickness; cut in 6 serving size pieces. Blend egg and milk; combine cracker crumbs, salt, and pepper. Dip meat in egg mixture, then in crumbs. In 12" skillet slowly brown meat in hot oil, turning once. Cover tightly; cook over low heat till meat is tender, 45 to 60 minutes.
Makes 6 Servings
