Chicken and Dumplings
Ingredients:
1 roasting chicken
1 1/2 tsp. salt
Water to cover
3 medium-sized potatoes
1 small onion
2 Tbs. chopped parsley
FOR DUMPLINGS:
1 1/2 c. flour
1/2 tsp. salt
3 tsp. baking powder
1 egg
2-3 Tbs. milk
1 roasting chicken
1 1/2 tsp. salt
Water to cover
3 medium-sized potatoes
1 small onion
2 Tbs. chopped parsley
FOR DUMPLINGS:
1 1/2 c. flour
1/2 tsp. salt
3 tsp. baking powder
1 egg
2-3 Tbs. milk
Directions:
Cut chicken into serving pieces. Cover with water and cook slowly until almost tender. Add sliced potatoes and finely chopped onion, parsley and seasoning. Cook 15 minutes longer and then add the dumplings to the boiling broth and meat. To make dumplings, sift dry ingredients together. Add beaten egg and milk. Stir until well blended. The dough should be stiff enough to drop from a spoon. Drop dough from a teaspoon into boiling chicken. Cover tightly and cook 10 minutes longer. Do not uncover until ready to serve.
Makes 6-8 Servings
