Peach and Blueberry Crisp
Ingredients:
Nonstick cooking spray
6 medium peaches, cut in chunks
2 c. blueberries
2 Tbs. flour
1/3 c. sugar
Juice of 1/2 lemon
TOPPING:
1/2 c. oatmeal
1/4 c. flour
1/4 c. brown sugar
1/2 tsp. cinnamon
1 Tbs. melted butter
Nonstick cooking spray

Juice of 1/2 lemon
TOPPING:
1/2 c. oatmeal
1/4 c. flour
1/4 c. brown sugar
1/2 tsp. cinnamon
1 Tbs. melted butter
Directions:
Preheat oven to 375. Spray an 8x8x2" baking pan with cooking spray. In a medium bowl, combine fruit, sugar, and lemon juice. Toss with your hands to thoroughly combine. Spread fruit out in baking pan.
TOPPING:
In a bowl, mix together oatmeal, flour sugar and cinnamon. Drizzle with melted butter, then rub topping between your hands until it resembles a coarse meal. Evenly spread over fruit and bake for 30 to 35 minutes, until fruit is bubbly and the topping is slightly browned. Remove and cool slightly.
Serve warm or at room temperature.
