Crab Au Gratin
Ingredients:
1 lb. white lump crabmeat
1 c. sharp cheese, grated
1 egg yolk, beaten
1 c. canned milk
1/2 c. white wine
Juice of 1/2 lemon
Onion salt to taste
1 Tbs. flour
1 Tbs. butter
Salt, paprika and lots of red pepper

Salt, paprika and lots of red pepper
Directions:
Pick crabmeat for bits of shell. Sprinkle lemon juice, salt, red pepper and onion salt over crabmeat; let stand while making sauce. Melt butter in top of double boiler, blend in flour, add cream and wine and stir until thickened. Add 1/2 c. grated cheese.Pour hot sauce over beaten egg yolk and let cool slightly. Mix sauce carefully with crabmeat. Put in baking dish. Sprinkle rest of cheese and paprika on top. Bake in 450 degree oven until brown.
