Cream of Potato and Onion Soup
Ingredients:
2 frankfurters
1 onion
1 qt. milk
1 1/2 tsp. salt
2 Tbs. butter
1 Tbs. flour
2 c. cooked, riced potatoes
1/4 tsp. pepper
2 frankfurters

1/4 tsp. pepper
Directions:
Wipe frankfurters with a damp cloth and slice in thin pieces.
Melt butter in a double boiler, add frankfurters and onions.
Cook 2 minutes.
Push frankfurters and onions to one side of pan and add flour.
When flour is well blended, add the milk gradually.
Then add potatoes and seasoning.
Cook until thickened and serve.
Makes 6 Servings
