Fresh Tomato Pie
Ingredients:
5 medium tomatoes, sliced and peeled
1/4 lb. grated American cheese
1 tsp. sugar
1/4 tsp. pepper
1 1/2 c. dry herb stuffing
1 medium onion, thinly sliced
2 eggs lightly beaten
1 tsp. salt
3 strips bacon, cut in half

3 strips bacon, cut in half
Directions:
Generously butter a 9" pie pan and cover bottom with stuffing. Fill pie plate with alternating layers of tomato, onion and cheese. Beat eggs with salt, pepper and sugar. Pour over layers in pan. Sprinkle top with balance of stuffing. Arrange uncooked bacon slices on top. Bake at 350 for 45 minutes until bacon is crisp.
