Fried Chicken
Ingredients:
1 c. flour
2 tsp. salt
1/4 tsp. pepper
1/2 tsp. celery salt
1 tsp. paprika
2 frying chickens, cut in serving pieces
1/2 c. shortening (preferably butter) for frying

Directions:
Combine the flour, salt and paprika in a brown paper bag. Add chicken pieces and shake until fully coated. Melt shortening in a heavy skillet and put in chicken, skin side down. Cook until golden brown on both sides; then cover and cook over low heat until tender - about 40 minutes. For a crisp crust, uncover the skillet for the last 5 or 10 minutes.
