Ingredients:
2 c. prepared instant mashed potatoes (made without margarine or salt)
6 medium cloves garlic, chopped
1/2 tsp. salt
1/4 c. olive oil
1/4 c. red wine vinegar
2 Tbs. water

Directions:
In a food processor or blender, puree the mashed potatoes, garlic, and salt. With machine running, gradually add oil, vinegar, and water and process until smooth. Cover and chill to allow flavors to blend for 1 to 2 hours before serving.
