German Potato Bake
Ingredients:
4 new potatoes, thinly sliced
Nonstick vegetable spray
1/4 c. chopped onions
2 oz. Canadian bacon, diced
1 tsp. chopped fresh parsley
1/4 tsp. celery seed
1 Tbs. cider vinegar
2 tsp. margarine
1 1/2 Tbs. flour
1 1/2 c. nonfat milk
4 new potatoes, thinly sliced
Nonstick vegetable spray

1/4 tsp. celery seed
1 Tbs. cider vinegar
2 tsp. margarine
1 1/2 Tbs. flour
1 1/2 c. nonfat milk
Directions:
Steam sliced potatoes until slightly tender. Place potatoes in a 10" baking dish coated with nonstick vegetable spray and layer with onions, bacon, parsley, celery seed and vinegar. In a sauce pan, melt margarine and add flour, stirring constantly. Cook the flour and margarine for 3 minutes. Do not brown. Stir in milk with a wire whisk and cook slowly until sauce begins to thicken. Pour white sauce over potatoes and bake for 20 to 30 minutes in a 350 degree oven, testing tenderness with a fork.
