Spiced Sweet Potato Balls
Ingredients:
3 lg. sweet potatoes (about 3 lbs.)
1 c. chopped pecans
2 Tbs. butter, softened
1 tsp. salt
1.8 tsp. allspice
1 8. tsp. cinnamon
1/8 tsp. nutmeg
Flour
Vegetable oil

Directions:
Cook sweet potatoes in boiling water to cover 30 to 35 minutes or until tender; drain. Let cool slightly. Peel sweet potatoes; mash in a mixing bowl. Add pecans and next 5 ingredients; beat at medium speed until smooth. Drop mixture, by rounded Tbs., into flour; gently roll into balls. pour oil to depth of 2" into a Dutch oven; heat to 380 degrees. Fry balls a few at a time, 2 to 3 minutes or until golden. Drain on paper towels. Serve immediately.
