Hollandaise Sauce


1/2 c. butter
1 egg
2 Tbs. lemon juice
1/4 tsp. salt
Pinch of cayenne pepper


Melt butter in top of double boiler over hot, not boiling, water. Add egg, lemon juice, salt and cayenne. Beat until mixture is thick and smooth. Remove at once from hot water. Serve warm over vegetables. Makes 3/4 cup.
